dad's sinigang

Sinigang is a filipino sour soup and tastes amazing poured over rice. This recipe I hold super close to my heart as I have the fondest memories of my dad making it when I was younger and when I would come home for college my dad would have it ready for me with extra to bring back to college. It is the most homey feeling food and a go-to in cold weather. I also find this easy to cook as it's mostly throwing everything in together and letting it cook in the soup--it's really a set it and forget it dish. I will be adding my personal changes in parentheses.

ingredients

  • 1/2 white onion chopped
  • 4 garlic cloves finely chopped
  • 1 tbsp chopped ginger
  • 1/2 large tomato chopped (sometimes I just do whole)
  • chinese long string beans
  • baby bok choy and spinach
  • 2-3 serrano peppers chopped
  • chopped taro (or I prefer daikon radish)
  • mama sita tamarind mix (i like 1.5 package to make it more sour)
  • 1 lb pork (spare ribs) cubed or your choice of protein

1. sautee the garlic, onion, ginger, jalapeno and tomato in a pot on medium heat
2. add the protein and season to taste with salt and pepper, then add ~2 cups of water and let it boil until tender
3. pour in 6-8 cups of water (you can also use chicken or pork stock) and add the packet(s) of mama sita
4. add the string beans, daikon and bok choy
5. after 10 mins add the spinach and let cook for another 25-30 mins on lower heat to simmer

low-carb chicken alfredo bake

a yummy alternative without pasta that I love to make since it's so easy! I normally eye everything based on what baking dish I use.

ingredients

  • chicken breasts
  • raw broccoli (preferably those bags you can steam in the microwave)
  • shredded parmesean
  • alfredo sauce
  • almond milk
  • salt, pepper, garlic powder and onion powder

1. pre-heat the oven to 375°F and prep first by cutting the chicken breasts and steaming the broccoli
2. cook chicken and season to taste until brown on medium heat, set aside
3. chop the broccoli if there are large pieces and cover the bottom of baking dish with a layer of broccoli
4. add the chicken over the broccoli and add shredded parmesean over it
5. pour the alfredo sauce into a mixing bowl and season with garlic and onion powder to taste and add some almond milk to thin the alfredo sauce a bit and mix until uniform
6. pour alfredo sauce over the chicken and broccoli and add more shredded parmesean over to your desire
7. place in oven for 20-25 minutes and enjoy!

sushi bake

I like to make this for get togethers

ingredients

for sushi rice:

  • 3 cups cooked rice (best if "al dente")
  • 6 tbsp un/seasoned rice vinegar
  • 3 tbsp sugar
  • 1 tsp salt

  • 8x8 baking dish
  • 6 oz imitation crab chopped
  • 9 oz salmon
  • 1/2 cup cream cheese
  • 1/2 cup sriracha mayo
  • green onion chopped
  • furikake
  • nori sheets (i prefer the snack packs since they're cut in small squares already and more sanitary when brought for get togethers)
  • sriracha (optional)

1. pre-heat oven to 450°F and prep making the sushi rice first by cooking the sushi rice (or jasmine rice if that's all you have)
2. mix rice vinegar, sugar and salt until sugar is dissolved. when rice is cooked move to baking dish and mix in using a folding method then spread evenly and flatten and sprinkle furikake on top
3. season the salmon with salt and pepper and bake for 20 min
4. when salmon is done add salmon and imitation crab to a mixing bowl. add in the cream cheese, sriracha mayo, green onion using a folding method then add on top of sushi rice and sprinkle a layer of furikake again
5. i like to take sriracha and sriracha mayo and do a curvy zig zag on top for a simple design
6. place in oven and bake for 15 minutes 7. enjoy with nori<3
